Breakfast Inspo!

Here’s a quick and easy breakfast plate for you.

Simple Fried Kale

-I used dinosaur kale (aka black kale or lacinato kale).

-How to: Destem a few leaves of kale and rip into large pieces, massage the kale (squish the pieces with your hands) for about a minute.  Place a tsp of coconut oil in a frying pan.  Once coconut oil is melted, add the kale, stir and saute for 1-2 minutes.  Add sliced baby tomatoes and continue to saute for another minute.  Remove from heat and add a crack of pink himalayan salt or sea salt.  Sprinkle with hemp seeds.

Sauerkraut

-I used Karthein’s Organic Sauerkraut.

-Sauerkraut is a fermented food with probiotic bacteria to help boost the amount of beneficial bacteria in the good (yes, certain bacteria is good for you!).

Coconut Bread

-This is called “Cocolithic” bread, and is made by a bakery called “Just Pies” in Penticton, B.C. (find it frozen in health food stores).

-Only 4 ingredients: organic coconut flour, organic whole coconut, sea salt & water… Wow!

-I toasted the coconut bread and topped it with almond butter and a shaved brazil nut.
