It’s that time of year! Ugg boots (are those still a thing?) and Starbucks PSL’s are taking over. For those of us who love to indulge in the flavours of the season, but don’t want to fall prey to drinks loaded with refined sugar, fake flavour shots, and artificial sweeteners, I have an upgraded pumpkin spice latte for you!
This latte is delicious. Creamy and smooth and just the right amount of pumpkin flavour. The coffee acts as a nice pick me up, but could definitely be substituted with dandy blend or removed completely. However, don’t skip out on the vanilla, it adds a nice dimension to this drink.
I’ve also included a recipe for creating your own pumpkin spice mix- a blend of cinnamon, ginger, nutmeg, cloves, and allspice in just the right ratios. Enjoy!
Pumpkin Spice Latte
- 1 cup coconut milk
- ¼ cup strongly brewed coffee (or 1 shot of espresso)
- 2 tbsp pumpkin puree
- 1 tbsp maple syrup
- ¼ tsp pumpkin spice mix (recipe below)
- ¼ tsp vanilla extract
Gently heat the coconut mylk in a saucepan on the stove.
Meanwhile, brew your coffee or espresso.
Once the coconut mylk is heated and the coffee is brewed, add them to a blender with remaining ingredients. Blitz until well combined. Serve sprinkled with cinnamon.
Pumpkin Spice Mix
A pumpkin spice mix to use in lattes, pumpkin pies/baking, or pumpkin spice smoothies!
- ¼ tsp cinnamon
- ⅛ tsp ginger
- Pinch nutmeg
- Pinch cloves
- Pinch allspice
Mix spices together and use seasoning to your liking. Increase ratios to create extra.
